Crunchy Zucchini Fritters With Avocado Dill Dip Recipe!

Fritters are fried foods that can consist of a meat, fruit or vegetable filling covered in batter, and are popular across the world due to their ease of preparation. Fritters encourage experimentation and improvisation, allowing you to create a recipe that is uniquely yours once you’ve found ingredients that go well together.

However, if you’ve been eating fritters from commercial establishments, there’s a chance you’ve eaten trans fats and other unhealthy substances, which can pose health risks in the long run. But why settle for unhealthy fritters when you can make a healthy batch right at home?

This recipe is an organic and healthy approach to the ever-popular zucchini fritters. The avocado dill dip makes the meal even better, because it provides extra flavor (and nutrients) that will surely complement the mild taste of the fritters.

Ingredients

– 1 large zucchini or 2 small
– 1 clove of garlic peeled and minced
– 1/4 Cup fresh basil; we grown our own, but you can find it at any grocery store
– 1/4 cup fresh oregano. Ditto
– 1 tablespoon lemon zest
– 2 organic eggs or ‘Flax Egg’
– 1/4 cup gluten free flour
– 1/4 teaspoon Onion powder or to taste
– 1 teaspoon salt or to taste
– 1/4 teaspoon of pepper or to taste
– Avocado dip base
– 1/2 cup finely chopped dill

Preparation

First, grate the zucchini and place it in a colander and put the colander in the sink. Add the salt and leave it for 10 minutes. Next, wring the zucchini dry in a towel and place them in a bowl and add the eggs, garlic, oregano, basil, lemon zest, and onion powder and mix well. While mixing, add the flour gradually. Stir continually to prevent the formation of lumps.

Then, in a large sauté pan, add 2 tbsp of coconut oil and put it over medium-high heat. Wait for the oil to heat and drop a small amount of the mixture into the pan, that is, 2 tablespoons. Repeat the same again until you fill the pan with fritters. Make sure to place them few inches apart from each other.

Cook them for 3 minutes and then lower the heat to medium. Turn them onto the other side and cook them for additional 3 minutes. Then, transfer them onto a plate with a paper.

For the dip, you need to cut the avocado in half and remove the seeds and the scoop the meat with a spoon and put it into a bowl and add the other ingredients. Mash them together until the dip becomes smooth.
